I’ve been following a pescatarian lifestyle for Lent where I gave up meat, bread and sweets. 39 days down, one day to go. I must say, it hasn’t been that bad but I do want one chicken wing and my gummy bears from Sprouts 😂.
Tonight’s dinner is jumbo shrimp “fried” brown basmati rice with one egg, green and white onions, a few peas, carrots, broccoli, crimini mushrooms, red and green bell peppers sauteed in a little sesame oil. No soy sauce was used. Cost was less than $5.00 and it’s enough for 2 servings.
