On Thursday night, I attended a great Blogger and Influencer Preview Party for the Vintage Market Days Show that's taking place this weekend Saturday from 10-5pm and Sunday from 10-4 at the Agricenter. Vendors range from jewelry, home decor, crafts, coffees, teas, and food items. I saw some really nice home decor and vintage gifts that's perfect for upcoming weddings, housewarmings or just because. Tickets are only $5.00 to attend. They gave us a nice swag bag of items from most of the vendors and I got an opportunity to make this cute This is Us sign that's made out of chalk paint from Chalk Couture. I figured the saying could represent when I was an extra on the TV show, "This is Us" until I get an Us 😂😂😂. So, the TV explanation will just have to do for now. Be sure to check them out this weekend with some of your girlfriends or hubby for some decorating ideas. Late lunch post..Rounding out the last of my @perduechicken ground chicken meals.Today, I made Ground Chicken Tacos with Charred Corn Tortillas, Red Cabbage, Shaved Carrots, Homemade Pico De Gallo and a Homemade Chunky Avocado Crema with a side of Mexican Cauliflower Rice and Fresh Strawberries and Blueberries.The berries are on sale for $2.99 at @Krogerco for 2lbs of strawberries and 18oz of blueberries. Strawberries and blueberries are great sources of antioxidants, fiber and they help fight against heart disease and certain cancers. Great workout as usual this morning with 16 of my Strong Seniors. I promise you they keep me laughing and on my toes. They tried to trick me and make me lose count doing our reps. All of the short and hard of hearing members decided to sit in the very back where they could barely see nor hear me 🤦‍♀️🤷‍♀️😂. They told me to open the door because I looked hot (ummm yeah I'm instructing, sweating, trying to stay on count, watching y'all to make sure you're exercising properly and I'm lifting heavier weights) but I do appreciate the concern lol. One of them is still trying to find me a husband talking about bring me that magazine you're in so I can show you to my married friend. I said, "Well that's not helping me if he's married." He said in front of his wife, "I know, but I'm sure he has some single friends. 🤦‍♀️😂" I just started laughing and said, "You're right. I'll bring you the magazine on Monday." Then someone told him to make sure the single guy has a long driveway too smh 😂. The husband didn't understand what he meant but his wife and I sure did. Be both agreed 😂. I love my seniors! Late Dinner Post: For the last 3 meals, I've posted different ways you can prepare @perduechicken ground chicken. I made a stuffed chicken burger, spinach and herb chicken meatballs over spaghettin and homemade chicken sausage with a veggie omelet.Tonight, I made Moroccan Spiced (homemade blend) Chicken Meatballs and Veggie Kabobs over a Cauliflower Rice Medley with Red Cabbage, Green Onions, Fresh Spinach and Mint with a side of Roasted Asparagus and a Tomato, Cucumber and Onion salad made with those beautiful colored snacking tomatoes and English cucumbers I bought from @krogerco this week. It pays to be doing business with the City of Memphis and Shelby County Government. I was invited to the Business Leaders Luncheon given by Shelby County Mayor Lee Harris and Assessor Melvin Burgess at their Memphis in May BBQ Tent. I decided to go for a walk afterwards since the BBQ fest is on the Riverfront and to check out some of the other elaborate tents. Only made it to a few and got about a mile in because it's extremely hot today and there isn't a breeze. I don't care what others may say, but Memphis hands down got the best bbq. Can't even duplicate it. Not up for debate lol. I have another event tonight and I'm already looking at my calendar over the next 3 weeks 😯. What's for breakfast that's only 425 calories and cost less than $3.50 per serving from the Healthy Budgetnista? I've been on a huge @perduechicken ground chicken kick ever since I made that scrumptious stuffed chicken burger the other day. So, this morning I decided to give it a try in making my own chicken sausage for breakfast. Talking about delicious! I formed and seasoned 2-2oz ground chicken patties like you would with regular sausage. Four ounces is a single serving size and I paired it with a vegetable omelet that consisted of 3 egg whites and one whole egg, asparagus, fresh spinach, red onions, red and orange bell peppers and mushrooms. No cheese. Added some fresh slices of tomato and 1/4 of a small avocado for my healthy fat. All of my veggies I found on sale at @krogerco this week. Everything on my plate added up to only 425 calories that's filled with some healthy proteins, healthy fats, vitamins, minerals, fiber and a few low calorie carbs to jumpstart my day. Try making your own chicken or turkey sausage. It helps control the sodium content and other added ingredients.
