Tonight, I used some of my leftover veggies from the week to create my flatbread pizza and salad dinner for Meatless Monday.
The pizza consisted of roasted eggplant, fresh spinach, caramelized onions, sundried tomatoes, portobello mushrooms, red bell peppers, minced garlic, a little mozzerella cheese, fat free feta cheese, and fresh basil with an olive oil, basil, parm and Italian seasoning base.
The crust is only 120 calories and 22 carbs for the entire pizza. You still can eat your favorite pizza with a healthy spin on it. You can get the @flatoutbread pizza crust at your local @thefreshmarket and my veggies were on sale or at a reduced cost at @krogerco
The total cost for this delicious and healthy meal was less than $6.00. Here’s to another successful, affordable and tasty Meatless Monday. Yum!
