Turkey Bacon and Veggie Egg White Frittata Muffins
4 medium egg whites
2 whole medium eggs with yolks
3 slices of jennie-o turkey bacon
1/4 cup of colby jack cheese
1 cup of fresh spinach
1 cup of white mushrooms
1/4 tsp minced garlic
1/2 cup of chopped red and green bell peppers
1/3 cup of chopped red and yellow onions
1 small roma tomato chopped
A pinch of kosher salt
1/4 tsp of Kroger garlic herb zesty seasoning blend
1/4 tsp of Kroger zesty table seasoning blend
Olive oil cooking spray
Directions
Cook turkey bacon according to the package and set aside
Spray a small saute pan with olive oil cooking spray and add your garlic until caramelized. Cook on medium heat
Slowly add your onions, peppers, and mushrooms. Cook until sweated/soften. Cook on medium heat
Add your spinach, tomatoes and turkey bacon last
Separate 4 egg whites and crack 2 whole eggs
Whisk your eggs in a separate bowl
Combine your eggs,cheese,veggies, bacon and seasonings
Spray your muffin pan with olive oil cooking spray and pour the eggs mixture evenly within each section
Bake for 20 minutes on 350° degrees or until done.
